When we put the panels on the old Hobie we thought she looked a little plain so we went back and outlined the panel with another color.  We final sanded her with 100 grit and shot her with gloss.  Sanded the gloss with 400 grit and then 600 grit.  Followed that with rubbing compound and tri-cut polish compound.  You can see the final outcome above.  Quite a finish for a trash can Hobie project.
